No Boil - Lasagna Dinner
Ingredients:
8-10 No Boil Lasagna Noodles (Can usually be bought at any grocery store)
1/2 Pound of Lean Ground Beef or Ground Turkey
1 Jar of Prepared Spaghetti Sauce
2 Eggs or Egg Substitutes
1 Cup low-fat Cottage Cheese
2 Cups of Grated Mozzarella Cheese
1/4 Cup Grated Parmesan Cheese
Salt and Pepper for Taste

Mix eggs, all three cheeses in a bowl and set aside.

Brown meat in skillet over medium-high until thoroughly cooked, draining any excess fat. Add the jar of Spaghetti Sauce and mix in with the meat.

In a 9" x13" pan, layer as follows for the Lasagna:
First layer: Meat mixture, cover the bottom of the pan.
Second Layer: No Boil Lasagna Noodles, cover the meat mixture
Third Layer: Cheese mixture, just covering the noodles

Repeat all three layers, until all mixtures are used. Top with some additional mozzarella if desired.
COVER and bake at 350 degrees for 1 hour, or until done. Cut into squares and serve.

Taco Dinner
Ingredients:
12 Taco Shells (Soft or Hard)
1 Package of Taco Seasoning Mix
1 Pound Lean Ground Beef
2/3 Cup of Water
1/2 Cup Shredded Lettuce
1/2 Tomato Chopped
1/2 Onion Chopped
1/2 Cup of Grated Cheddar Cheese

If hard taco shells, heat as directed on package.

Next, brown meat in skillet over medium-high until thoroughly cooked, draining any excess fat. Stir in taco seasoning package and water, cook and stir 2 to 4 minutes.

Next spoon meat filling into taco shells. Top with lettuce, tomato's, onions, and cheese. Serve.

Quick Pork Chops & Rice
Ingredients:
1 Pound of Pork Chops
1 Can Cream of Mushroom Soup/ I Can of Water
1 Package of 5 Minute Rice
1 Tablespoon of Vegetable Oil

In a skillet add the Vegetable Oil and heat on medium and add the pork chops, brown on each side for about 2-3 minutes each. Then add the can Cream of Mushroom Soup, and one can of water. Stir.
Cover and simmer for about 20 minutes, until the pork chops are thoroughly cooked.

Prepare rice as directed on package. Place a scoop of rice on a plate, then one pork chop and top with mushroom soup from the pan.

Pecan Breaded Baked Fish and Corn on the Cob
Ingredients:
1 Pound of White Fish Fillets, cut into 4 servings
1/2 Teaspoon Salt
1/4 Teaspoon freshly Ground Black Pepper
1/2 Cup Chopped Pecans
1/4 Cup Breadcrumbs
1 tablespoon Vegetable Oil.

For Corn:
3-4 Corn Cobs
Salt and Butter to taste.



Heat oven to 450 Degrees. Oil 13 x 9 x 2-inch baking pan with 1 tablespoon Vegetable Oil.

Rinse fish. Pat dry. Sprinkle with salt and pepper. Arrange in baking pan.
Combine pecans and breadcrumbs. Pat mixture on top of fish.
Bake at 450 Degrees for 10 minutes, or until fish flakes easily when tested with fork. Garnish with
Lemon wedges

For Corn: Boil the corn on the cob in water until thoroughly cooked. Serve with butter and salt to taste
